| Abstract: Gastronomy tourism has increasingly shifted towards immersive and experience-oriented travel; however, structured gastronomy trails remain underexplored, particularly in heritage destinations. This study conceptualises the Immersive Gastronomy Trail (IGT) as a novel tourism product and examines its influence on Memorable Tourism Experiences (MTE), Tourist Satisfaction (TS), and Behavioural Intentions (BI) using Madurai, India, as the study context. A mixed-method research design was adopted, integrating quantitative data from 200 valid respondents (90 domestic tourists, 80 international tourists, and 30 travel influencers) with qualitative insights from 20 tourism stakeholders. Quantitative data were analysed using descriptive statistics, reliability analysis, Pearson correlation, Chi-square, and multiple regression, while qualitative data were examined through thematic analysis. The findings reveal that the Immersive Gastronomy Trail, characterised by multisensory experiences, authenticity, storytelling, social interaction, place-based immersion, and a sequential guided culinary journey, significantly enhances memorable tourism experiences, tourist satisfaction, and positive behavioural intentions. The study introduces the Immersive Gastronomy Trail (IGT) as a new conceptual framework in gastronomy tourism and provides empirical evidence supporting the development of official gastronomy trails to strengthen destination competitiveness, preserve culinary heritage, and promote sustainable tourism in heritage destinations. |
